What’s For Dinner: Chipotle Pepper and Cumin Roasted Chicken Fajitas

DIY’ing at the dinner table has always been a thing in my family. Growing up the most popular make it yourself spread was the chicken fajita. And while these memories are of simpler times, i.e., shredded lettuce, diced tomatoes, Kraft shredded cheddar, and grilled chicken, there is no denying that the famous sizzlin’ fajita is just really damn delish, no matter the sum of the parts.

By classing it up a bit with authentic Mexican spices, restaurant worthy – make ahead side dishes, and some adult beverages, fajita night is still a major thing in adulthood (wait, I have to be an adult?). So when days like Cinco de Mayo roll around, or just about any other Friday night, the fajita is one serious party participation pleaser.

Adding Broccoli Rabe makes you allowed to say this pizza is good for you because it is packed with antioxidants, calcium, and vitamin C. It’s known to help eye site, hair growth, and is a brain booster. So basically this is health food. and a pizza.

Korean Beef Bulgogi & Kimchi-Veggie Noodle Bowls

Beef Bulgogi is super popular. Why? ‘Cause it is bomb. Every Korean family, chef, or bulgogi-connoisseur has their own twist: adding fruits, citrus, and spices to the marinade or toppings and accoutrements. Our version takes a traditional approach with the addition of fresh orange juice for tang and to mellow out some of the spice from the Gochujang (fermented chile paste).

We also love to serve it in a bowl along side rice, grains, or noodles, for a one dish show stopper. Pair our Bulgogi with two other Korean inspired Fete-a-Tete side dishes, our Kimchi-Veggie Noodle Stir Fry and Ginger Chile Brocolli Rabe and Red Pepper Sauté. Served together in a bowl, the complex spices, flavors, and combinations of Korea have us Seou’led on our new 2017 food destination of choice.
